Oven-Roasted Savory Thighs


  • 6 boneless, skinless chicken thighs (about 1-1/2 lbs.)
  • 1 cup thinly sliced fennel [or celery]
  • 8 plum tomatoes, quartered
  • 2 Tbsp. orange juice
  • 2 Tbsp. Bertolli┬« Extra Virgin Olive Oil
  • 1/4 tsp. salt
  • 1/8 tsp. ground black pepper
  • 2 Tbsp. finely chopped fresh basil leaves [or fresh parsley leaves]


  1. Preheat oven to 425┬░. In broiler pan, without the rack, combine all ingredients except basil. Roast 20 minutes or until chicken is thoroughly cooked. To serve, sprinkle with basil and serve with Knorr Couscous and Parmesan Pita Triangles*. *Parmesan Pita Triangles: Cut 2 pita breads into quarters, then open and cut in half to make 16 triangles. Brush generously with Olive Oil, then toast lightly. Sprinkle immediately with grated Parmesan cheese.
