4 medium tomatoes, halved
1/3 cup coarsely chopped sweet onion
15 arugula or baby spinach leaves (about 1 cup) 
1 medium clove garlic
1/4 cup Bertolli® Classico™ Olive Oil
1/2 cup grated Parmesan cheese
1 tsp. salt
1/8 tsp. coarsely ground black pepper
1 box (16 oz.) farfalle or bow tie pasta, cooked and drained 

Process tomatoes, onion, arugula and garlic until finely chopped in a food processor. Turn into large bowl, then stir in Olive Oil, cheese, salt and pepper. Add farfalle and toss well. Serve immediately or at room temperature with additional cheese.
