MUSTARD COATED FILLET OF BEEF

Ingredients:
1/4 cup Bertolli® Extra Virgin Olive Oil
1/4 cup grainy or whole grain mustard
1 clove garlic, finely chopped
1/2 tsp. coarsely ground black pepper
2-1/2 to 3- lb. beef tenderloin
Directions:

Preheat oven to 400°. In small bowl, blend Bertolli® Extra Virgin Olive Oil, mustard, garlic and pepper. On lightly oiled baking pan, arrange beef. Evenly spread with olive oil mixture. Roast 40 minutes for rare or until desired doneness. Let stand 10 minutes before slicing.
