CHILLED MANGO SOUP

This Chilled Soup Can Be A Refreshing Change From The Warm Bowls You May Be Used To. It's Best If The Mangos You Use Are Ripe (Check To See That It Indents Easily When You Apply Light Pressure With Your Finger And That It's Fragrant When Held Near Our Nos

Ingredients:
2 medium mangos, peeled, seeded and chopped
1/2 cup water
1/4 cup rice wine vinegar
1 Tbsp. Bertolli® Extra Virgin Olive Oil
1/4 cup finely chopped red onion
1 cucumber, peeled, seeded and chopped
1/4 cup fresh cilantro
1/8 tsp. salt
2 Tbsp. chopped chives
Directions:

In blender or food processor, process all ingredients except chives 2 minutes or until smooth; strain if necessary before serving. Serve chilled and sprinkled with chives.
