ROTISSERIE CHICKEN WITH ORANGE & PISTACHIO

Tired Of Having Rotisserie Chicken With The Standard Sides? Try This Fuss-Free Recipe, Which Is Both Flavorful And Unique!

Ingredients:
2-1/2- lb. rotisserie chicken, skin removed and chicken coarsely chopped (about 3-1/2 cups)
2 oranges, peeled and sectioned
1 Tbsp. finely chopped red onion
1 Tbsp. Bertolli® Extra Virgin Olive Oil
1 Tbsp. sherry wine vinegar
1/8 tsp. salt
Ground black pepper to taste
4 cups chopped romaine lettuce leaves
1/4 cup coarsely chopped and toasted pistachios
Directions:

In large bowl, combine all ingredients except lettuce and pistachios. Let stand 5 to 10 minutes or refrigerate covered until ready to serve.

Just before serving, add lettuce and pistachios and gently toss.
